Since buying a Weber Genesis E310 Grill and a Char-Broil The Big Easy Oil-less Deep Fryer a couple of years ago, I’ve fallen in love with grilling out again. I had lost my zeal over time simply because the results of my efforts were inconsistent. These two outdoor appliances helped me gain confidence in cooking again. This isn’t a review of the cookers, however, so suffice it to say that each is spectacular and well worth the money.
So, I’ve been experimenting with a variety of sauces and rubs… most store bought and some from recipes I found online. Some were pretty good, some just so-so and others totally disappointing. Also, it seemed that some were tasty on some meats but not others.
I wanted a dry rub that worked for any type of meat and I’ve finally found it. This rub tastes similar from meat to meat but seems to adapt to each meat in unique ways so as to not become boring. Favorites include chicken thighs in the oil-less fryer, chicken wings on the grill, lean pork loin in the fryer or on grill and hamburgers on the grill. Note that the oil-less fryer provides a nice crispy outside and super juicy inside without the safety and health concerns associated with frying in oil.
Dry Rub Recipe (I double this recipe because we use it so often.)
1/4 cup Paprika
1.5 tablespoons Cayenne Pepper (fairly spicy so might want to adjust to personal taste)
2.5 tablespoons freshly ground black pepper
3 tablespoons Garlic Power
1.5 tablespoons Onion Powder
3 tablespoons Salt (some prefer less salt – adjust to taste)
1.25 tablespoons Dried Oregano
3/4 tablespoons Dried Thyme
